Vegan Lemon Cake Recipe (Healthy & Moist)


Ingredients:

  • ¾ cup maple syrup or coconut sugar
  • 1 tsp baking soda
  • 1 tsp baking powder

  • ¾ cup plant-based milk (almond, soy, or oat)
  • ¼ cup fresh lemon juice
  • 1 tbsp lemon zest

  • ½ cup powdered sugar (or blended coconut sugar)
  • 1-2 tbsp lemon juice

Instructions:

  5. Bake: Pour the batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean.
  6. Cool & Glaze: Let the cake cool before drizzling with lemon glaze (if using).
