1 tsp chili flakes (optional for heat)
Instructions:
1. Preheat your oven to 200°C (400°F).
2. Place the pumpkin slices and cherry tomatoes on a baking sheet. Drizzle with olive oil, sprinkle oregano, minced garlic, salt, and black pepper. Toss well.
3. Roast for 20-25 minutes until the pumpkin is tender and slightly caramelized, and the tomatoes are blistered.
4. Remove from the oven and let it cool for a minute.
5. Arrange the roasted pumpkin slices on a plate, scatter cherry tomatoes, arugula leaves, and crumbled feta on top.
6. Optional: Garnish with chili flakes and crushed walnuts for added texture.
7. Drizzle with a little extra olive oil before serving.
