Konro Makassar ( beef ribs soup from makassar - indonesia)


Indonesia had many exotic taste, Last night i got to music jazz show. not big event but enough for me to meet some people which have same favorite music with me. one of them is Aira, she is vocalist and comes from Makassar she told me about her special menu " Konro Makassar ( Beef ribs soup )"
don't worry i will share with you the recipe of Konro Makassar

Konro Makassar
(beef ribs soup)

1 kg beef spareribs
300 gr freshly grated coconut
4 liters water
3 stalks lemon grass, tender inner part of bottom third only, bruised
1 inch fresh galangal, sliced
3 kaffir lime leaves
1 teaspoon salt
crispy fried shallots

Spice Paste
3-4 shallots, peeled
3 macadamia nuts or candle nuts, roughly chopped
2 cloves garlic, peeled

Separate the beef ribs and cut into lengths. set a side
Dry fry the grate coconut in a skilled over low heat, stirring constantly until it turns golden brown. about 10 minutes for fresh coconut and 5 to 7 minutes for dessicated coconut. remove from the heat and allow to cool. while still warm, grind coconut in mortar or blender until fine, set a side.
Prepare the spice paste by grinding all the ingredients to smooth paste in a mortar or blender, adding a little water if necessary to keep the mixture turning, set a side.
Bring the beef and water to a boil in large pot and shimmer uncovered over medium heat until the beef tender, 30 - 40 minutes. Add the grown coconut, spice Paste and remaining ingredients (except the crispy fried shallots) mix well and continue to shimmer for 15 more minutes, till the beef is very tende, but not falling of the bones. remove from the heat and serve garnished with the crispy fried shallots.
