Ingredients
4 salmon fillets (4-5 oz each)
1 bunch asparagus, trimmed
2 tbsp olive oil
3 tbsp unsalted butter, melted
2 garlic cloves, minced
Juice and zest of 1 lemon
1 tsp dried oregano
1 tsp parsley (fresh or dried)
Salt and pepper to taste
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Place salmon fillets on one side of the sheet and asparagus on the other. Drizzle olive oil over the asparagus, season with salt and pepper.
3. In a small bowl, mix melted butter, garlic, lemon juice, zest, oregano, and parsley. Brush the mixture generously over the salmon.
4. Bake for 12-15 minutes, or until the salmon is flaky and cooked through, and the asparagus is tender.
5. Serve with lemon wedges for extra zest.
